Planning for SharePoint can be the most integral step in deploying a SharePoint environment.  Without planning, a company cannot effectively know the disk storage requirements, the topology, the configuration settings, or requirements needed for laying out the sites, and features within SharePoint.  Deployment can be rocky, and more costly than it would have been had the proper planning taken place beforehand.

Nihan Technologies has been brought on to multiple projects where unfortunately, the client stood up a SharePoint server without proper planning.  This can result in server, storage, performance, and productivity issues.

We do use the standard Microsoft Planning documents, and with the experience we have had in planning, and taking over poorly planned MOSS2007 deployments we can offer insight into potential and future issues.
